Infused Honey

Ingredients:
- 1 cup honey (raw honey works best for maintaining nutrients and flavor)
- 3-4 grams decarboxylated cannabis (adjust depending on your desired potency)
- Cheesecloth or fine mesh strainer
- Double boiler or a glass bowl and saucepan
- Airtight jar or container for storage
Instructions:
- Decarboxylate Your Cannabis:
Preheat your oven to 240°F (115°C). Place the cannabis on a baking sheet lined with parchment paper and bake for 40 minutes. This activates the THC or CBD, making it bioavailable for infusion. Once done, set it aside to cool. - Set Up Your Double Boiler:
Fill a saucepan with a few inches of water and bring it to a simmer. Place a heat-proof glass bowl or the top of a double boiler over the saucepan. Add the honey to the top container or bowl. - Combine Cannabis and Honey:
Stir the decarboxylated cannabis into the honey. Mix thoroughly to evenly distribute the cannabis. Maintain low heat throughout this process to prevent the honey from overheating or burning; aim for a temperature under 200°F (93°C). - Simmer and Infuse:
Keep the honey-cannabis mixture over low heat for 1.5-2 hours, stirring occasionally. This allows the cannabinoids to infuse without degrading the honey's natural quality. Make sure the water in the saucepan doesn’t evaporate completely—add more if needed. - Strain and Store:
Remove the infused honey from heat and allow it to cool slightly (enough to handle safely). Place a cheesecloth or fine mesh strainer over a clean container or jar, and slowly pour the honey through it to strain out the plant material. Use a spoon or spatula to squeeze out as much infused honey as possible. - Seal and Store:
Transfer the strained honey into an airtight jar or container, seal tightly, and store in a cool, dark place. Honey has natural preservative properties, so this infused version can last for several months if stored properly.
