Tiramisu is a beloved Italian dessert combining delicate layers of coffee-soaked ladyfingers and a creamy mascarpone filling. Adding a cannabis twist makes it extra indulgent! Here's how to make it:
Ingredients:
For the mascarpone cream:
- Mascarpone Cheese: 1 cup (room temperature, 250g)
- Heavy Cream: 1 cup (cold, 240ml)
- Egg Yolks: 3 large
- Sugar: 1/2 cup (100g)
- Cannabis-Infused Butter (CannaButter): 2 tablespoons (adjust based on preferred potency)

- Ladyfingers: 20-24 pieces

Instructions:

- Infuse the mascarpone base:

- Whisk the egg yolks and sugar in the bowl until combined. Heat the mixture gently, whisking constantly, until it thickens and turns pale (about 5 minutes). Remove from heat and allow it to cool slightly.
- Add the mascarpone cheese and cannabis-infused butter to the egg yolk mixture. Beat until smooth and creamy. Set aside.
- Whip the cream:
- Using a hand or stand mixer, whip the cold heavy cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture in 2-3 batches, ensuring a light and airy texture. Be careful not to overmix.
- Prepare the coffee dip:
- Combine the cooled espresso (or strong coffee) with coffee liqueur or rum (if using) in a shallow dish.
- Build the layers:
- Quickly dip each ladyfinger into the coffee mixture, ensuring they soak up some liquid without becoming overly soggy. Lay the dipped ladyfingers in a single layer in a shallow baking dish (approx. 9x9 inches).
- Spread half of the mascarpone cream mixture over the ladyfingers.
- Add another layer of coffee-dipped ladyfingers, followed by the remaining mascarpone cream mixture.
- Chill and set:
- Cover the dish with plastic wrap and refrigerate for at least 4 hours (or overnight) to allow the flavors to meld and the tiramisu to set.
- Garnish and serve:
- Just before serving, dust the top with unsweetened cocoa powder using a fine mesh sieve. Slice into portions and serve chilled.
